DOVGA
(Azerbaijan’s Yoghurt Soup)

Ingredients:
1 egg
1,5 spoons wheat
flour
2 spoons rice
3 glasses yoghurt
6 glasses water
1 glass boiled
chickpeas
½ bundle of spinach
½ bundle of mint
½ bundle of dill
Salt
Preparation:
Blend the egg,
flour, rice and yoghurt thoroughly in a pot and add water
little by little. (Yoghurt should have a consistency of
thick ayran). Then stir the mixture with a wooden spoon
until it boils with normal heat. After it starts boiling,
reduce the heat, add pre-boiled chickpeas and salt. After
rice become soft enough for eating, add minced greenery and
let it be boiled up once.
